I don't eat Kraft anymore, but I still dive gleefully into a box of Annie's Peace Pasta or Trader Joe's brand mac & cheese. It's so easy to make it at home though, that there's no reason not too. Plus it makes enough that I always have tasty leftovers!
You will need:
2 Tablespoons butter
2 Tablespoons flour
2 Cups milk
2 Cups grated cheese (I've used everything from cheddar to gruyere)
1 lb pasta
Toppings of your choice, and seasonings to taste
A Pyrex baking dish or cast iron skillet
Cook the pasta according to the directions on the package. You want it just shy of al dente; so perhaps a minute less cooking than indicated. While it's cooking, make the sauce!
In a medium saucepan or skillet, melt together the butter and flour over medium heat. Add the milk and stir frequently with a whisk over medium-low heat until it begins to thicken. Add the cheese and stir until thoroughly melted; remove from heat. Add salt and pepper to taste.
Drain the pasta. Preheat the oven to 350 degrees. If you're using a cast iron skillet, just pour the pasta into the sauce! If you're using a Pyrex dish, pour the pasta into that, and then pour the sauce over it, mixing thoroughly. Top with extra cheese, Parmesan, breadcrumbs, or whatever else you like! Bake uncovered for 25-30 minutes, then enjoy!
